Tastey Tuesday....Country Harvest Eggs Benedict



For your tasting pleasure: Country Harvest Eggs Benedict

This is a new item on the Bob Evans menu, haha, but I like it so much I make it at home.


What you need...in the order of assembly

1 Buttermilk biscuit split in half (I buy a bag of frozen ones)
cooked spinach
bacon crumbled
2 poached eggs
hollandaise sauce (I cheat and buy the powdered sauce mix packet)
diced tomatoes

It's simple, easy, cheap, and yummmmmmmy. Go get you some!

Tuuuesday

1. I should get my bootay outside today and take some photos of the ever growing flowers and such since it is going to be so overcast (making for perfect lighting).

2. I would if I wasn't so sick still...Makenna had a cold for two weeks, Brent for one, I'm still at less than one week and complaining every single day. Pitiful. Brent tells me chicken soup will get me all better, I tell him a gyro will, he snickers. I have no gyro.

3. We didn't really do anything last weekend, and would have loved to, but...oh yeah it snowed. I still need to put together my rain barrel. I have the parts now...just need the motivation.

4. I may make a tastey tuesday post...Country Harvest Eggs Benedict, made it last night...so good, and now I can successfully poach eggs.

5. I love the sounds of birds chirping in the morning.

6. Last week I started some seeds for; white coneflowers, two kinds of sweet peas, chives and some other stuff I can't remember....while at Menards Makenna deemed that we are growing organic pumpkins this year. We'll see if the plot I want to put them in gets enough sun. And they will be very organic b/c the groundhog likes to take a dump over there. Ha.

7. Anyone have dutch lilies in their yard? I have some and am thinking about moving them, but read they can be very aggressive when in a perennial garden. Is this true...yay or nay?

8. Still loving the Prius, in fact I think I may be a little more attached than previously thought. Last week I had a dream someone stole it....I was not happy.

SUBORDINATE ALREADY BUSEY

Warning..I will be cursing in this post and speak quite negatively..please cover the eyes and ears of the young and elderly...

We are working on refinancing the house with the low interest rate that there are right now..going from a 30 year to a 15 year as well. We have some second mortgages on the house that relieve themselves (no not like that ...relieve). They are grants that you must stay in the house for 5 years or if you sell it you must pay the balance..HERE LIES THE PROBLEM...

BUSEY IS BEING A BITCH AND NOT WANTING TO SUBORDINATE...Busey Bank says they won't know if we sell the house when refinancing....ummmm that is why they have a lien on the house....anyway they couldn't match, nor even tried to match what the other bank was offering and now want us to pay either a convenience fee or the rest of the grant to them...SUCK IT BUSEY BANK...we won't be using you for any banking or loans from now until eternity and you won't be getting any referrals from us to our young, getting married, starting families, BUYING HOUSES AND CARS friends either. If anyone from Busey Bank would like to talk, call, email, stop by our house or get in contact with us in anyway (since they apparently only want to talk to the bank we are using to refi- and not their actual customer), then please leave a comment.

So moral of the story, don't use Busey Bank because they will try to screw you. I'm thinking maybe they should be a little more nice to the tax payers since..Oh I don't know we just gave a CRAPLOAD of bailout money.

Happy 2p!

This last weekend was Brent's birthday! Yesterday we went to LaBamba's for some awesome burritos! We spent time in the backyard before throwing the ribs in the oven to start dinner. After dinner we celebrated with an ice cream pie from a local place.

Saturday morning we met up with our buyers of the Mountaineer to turn the reigns over to them! We also spent some time chatting with the neighbor in the yard and showing him the house.

Last week Makenna had a fever and Brent was sick to his stomach...this week..running nose and coughing.

Weekday--Weekend--


This morning I awoke confused..thinking it was Monday and the trash needed to get out to the curb, though after a few moments I realized it was in fact Wednesday. That is what taking a day off during the week does to me...lol.

Makenna must be out of whack too, she decided to go back to bed. She was being very quiet and I hadn't seen her in about 5 minutes..this usually means I am going to have to clean something up..somewhere. I go looking for her and find her laying on the guest bed..head on a pillow, thumb in mouth, blankie covering her, drool down her chin..totally ok with me.

Anyway as I was saying yesterday Brent took the day off work. It was so nice outside, all of us have minor sunburns from eating lunch and playing at the park. We also needed to run by the bank with our Prius title before heading to the DMV to have the plates transferred and getting an Illinois title, oh and paying taxes. We were in and out of the dmv in less than 5 minutes, way faster than any other dmv visit in recorded history!

Anyway that is all taken care of, we had a wonderful day, we took the Prius for a car wash (even though it's suppose to rain today), which was free because we had a coupon thing from Peep. After Makenna's nap we walked on down to the local grocery to pick up some pizza for dinner and a dvd for afterwards, enjoying it immensely. Last night I took a trot on the treadmill as well as the total gym and even clocked in 10 minutes on the row machine, oh yeah look at these guns! What a lovely weekday-weekend!

We've GOT that loving feelin'....

Whoaaa whoaaa whooaaa...

So we've had the Prius for about three weeks now! Last weekend, we checked all the fluids, replaced the engine air filter and the cabin air filter and last week we also checked the tires. I figured the tire pressure was a little low because we weren't quite getting the mileage we were suppose to..like only 34mpg. They were only aired up to 26psi...the tires are rated for 44..after a quick run to the gas station we are rocking...50mpg..WHOOOOOOT! We've not driven the mountaineer since we bought the Prius and I've not missed it one bit! 50mpg love it...now if I can just stop speeding the Prius we'll be gold.

Review- Homerun Inn Pizza

Ok so about three weeks ago I was standing in the new County Market down the street and decided I'd pick up a frozen pizza, ya know, for those.. I could care less what I am eating moments/days.

Now the tough decision comes...what brand...because most of them are crappy regardless. So I am looking and looking and remember a pizza commercial for Homerun Inn Pizza...checking to see if they have this brand.

They do! It's on sale for about $6..I'll bite (haha, pun intended).

Oh My God! It is soooooo goood, and let me tell you we've probably bought like 4 since..it doesn't last in the freezer longer than a day...and don't even think about left overs. Why? Because we never have any...ever...it's THAT good.

Crazy Days

It's been feeling a little crazy here lately...

earlier this week we cleaned the house like people with OCD because we had an appraiser out...appraising the house. Low interest rates=time to refinance. We had a pretty low interest rate on the original mortgage but figured the house's value has appreciated enough that we'd appraise at 80% of the loan and be able to drop our PMI. Whoot, we did. We also went from a 30 year loan to a 15 year and will save a large chunk of monies from not having to pay the interest. Yes, I know that the cleanliness of the house has nothing to do with how it appraises but really, it was a HOT MESS.

Last night ... due to murphy's law this part may or may not be added back to this post at a later time...thank you for reading.

Makenna is here next to me, playing with her building blocks watching...ah yes Teletubbies..her all time favorite. Not that she reeeeeally watches it, but the moment you turn it off SHE KNOWS and whines that she wanted to watch that, ha!

Maybe I'll be nice and post some new photos today....maybe. If you ask nicely...kidding.

Daffodils, Tulips and Begonias..Oh my...




With all the really nice weather we have been having, I went to Prarie Gardens last week....twice. We worked in the yard the other, raking some leftover leaves, throwing them on the compost pile and stuffing them in the raised vegetable beds. With the leaves mostly gone you can see the beginnings of the daffodils, tuplics, hyacinths, new irises, peonies, phlox, salvia, lilies and more! You remember last year when I complaining about planting bags of daffodils, tulips and crocuses? Well, it will all be worth it when they bloom!








The snowdrops in the backyard are already blooming and so cute! At Prarie Gardens I also picked up some bright orange pansies and some begonia tubers (wish me luck, I've not done begonias before). I'm hoping for some bangin' hangin' baskets this year! I bought some red hanging begonias and some orange hanging begonias. Most of my garden is purple and yellow with a little bit of pink, soooo red and orange begonias were me trying to open my color horizons. I also picked up some broccoli plants, and a couple of little tomato plants (I know it's really early, but they were just sitting there...)

The other day I was browsing/wasting time at Target. I went down the hair accessory isle, because really I need more hair crap (sarcasm was inserted there). Anyway Target, hair crap isle, and low and behold..what do I see, VETWRAP, really...they are touting it as a hair accessory for pony tails or for a hairband? It's a roll of vetwrap...now back when I was in school, in my vetmed days you may have occasionally caught me with some gauze being used as a pony tail holder, but ONLY out of necessity. So if you see some students walking around with vetwrap in their hair, I broke the news here first....Vetwrap, when you need to bandage your hair. Maybe I should market gauze bows...hmm....

Anyway, last weekend was the big 25 birthday for me. Fairly uneventful..I decided we needed to drive to Danville because what I truly wanted was some Pizza Inn Pizza, pepperoni and mushroom, thin crust, GIANT size, so I could take home leftovers (I took home two pieces..the treadmill will be brutal this week). Then we drove back to Champaign for some Mariokarting after everyone left, we all took a nap. The post office knew it was my birthday so they delivered my clothing order on my birthday instead of the Tuesday after (or this is what I surmised). After a long nap we were hungry again annnnd it was almost 8pm sooooo Chinese food was in order (or shall I say on order, haha). For your information Green Jade doesn't close until 10pm on Saturdays, awesome! And I don't remember anything after my Chinese induced coma.....somewhere in between all this we also had birthday cake, yummy. I'd like to thank everyone for the wonderful birthday gifts and well wishes!
